The story

Seyval Blanc is a French hybrid from the Seyve-Villard nursery, a cross of Seibel 5656 and Rayon d'Or. It belongs to the hybrid and PIWI varieties that still make up about 80% of Polish plantings, and it is common in central Poland. In West Pomerania it is grown too.

On its own it is quiet: lemon, green apple, a little hay, high acidity and a light frame. That neutrality is useful. It makes a clean base for sparkling wine, and it stays out of the way at the table.
