The story
Juhfark is a Hungarian white found mainly on Somló, and the name means "sheep's tail". Hungary's wine geology runs to basalt, rhyolite tuff, andesite and loess, and Somló is one of its volcanic places. The grape is rarely seen far from it.
Young Juhfark can be austere: high acidity, little obvious fruit, a salty, smoky edge. With time it tends to broaden into something textured and savoury, lemon peel and beeswax over stone. It is a wine for patience.
